Banana, Coconut and Honey Loaf
With Mother’s Day on Sunday I didn’t get into the kitchen to do my usual Sunday baking for the weeks lunches. Not because I didn’t have time with ALL the spoiling* but mainly because I just couldn’t be arsed and it was MY DAY and I could do as I pleased, right? Right!
So once the kids were all tucked up in bed last night I did a little googling for Banana Bread, as I had a few manky old bananas that needed using up, and found this delicious sounding recipe by Nadia Lim for Gluten-Free Banana, Coconut and Honey Loaf.
I have cooked a few of Nadia’s recipes before (her Chocolate and Berry Brownies made with black beans are so YUM!) and love that she embraces the no refined sugar thing, as I am trying to get my kids to eat less sugar.
So this recipe looked like a winner. It was super easy and even better super delicious and moist and is what I am chowing down on right now as I write this.
