Lemon Poppy Seed Muffins

My favourite flavour of muffin has to be Lemon Poppy Seed.  So I thought I would share the recipe with you all here …


2 cups self raising flour

1 cup sugar

1/2 cup poppyseeds

finely grated rind of 2 lemons

juice of one lemon

100g butter

2 large eggs

1 cup milk


Mix flour, sugar and poppy seeds in a bowl and then add in the lemon rind.  Melt butter and add once cooled slightly to milk and eggs.  Beat with a fork then tip into dry ingredients along with juice from lemon.  Only mix just enough to combine then spoon into a greased muffin tray and bake for 12-15 minutes at 200 C.

Lemon Butter Icing

100g softened butter

Juice of second lemon

2 cups icing sugar

1/4 teaspon vanilla essence

1 to 2 tablespoons hot water


Once muffins are cool, top with lemon butter icing … then simply enjoy with a cup of tea!
