This recipe is a hearty, delicious recipe, perfect to feed the tribe on a cool winter’s night, or any time you need a little comfort food, and best of all, its SUPER easy, and very affordable to make. Well done Chelsea on a great recipe!
Mediterraean Sausage Bake
Sausages are a tasty classic Kiwi favourite. And while I’m a huge fan of bangers and mash and a good old sausage sizzle with onions, tomato sauce and white bread, there’s no reason you can’t use the humble sausage in a more sophisticated dish. It’s all about using good-quality, fresh ingredients and the right flavour bases. The cannellini beans have a lovely texture and a nut-like flavour – and they make a nice change from potatoes.
1 tbsp olive oil
9 beef sausages
1 onion, finely chopped
4 cloves garlic, roughly chopped
1 x 420g can cannellini beans, rinsed
2 x 400g cans chopped tomatoes
½ cup kalamata olives
⅓ cup fresh oregano leaves, roughly chopped
1 tbsp chopped fresh thyme leaves
zest of 1 lemon
pinch chilli flakes (optional)
½ tsp salt
freshly cracked black pepper
2cm thick slice feta, crumbled
½ cup chopped fresh parsley leaves
Preheat the oven to 180°C.
Heat the olive oil in a saucepan over a high heat. Prick the sausages all over and fry them in the pan until golden brown all over. Prick again while in the pan if you need to. Drain on paper towels.
Place the sausages, onion, garlic, cannellini beans, tomatoes, olives, oregano, thyme, lemon zest, chilli flakes if using, and salt in a large oven dish. Finish with a good grind of pepper. Place in the oven and cook for 1 hour.
Taste and season with salt and pepper if needed, then top with the crumbled feta and fresh parsley.
