Vanilla & Cinnamon Cupcakes.

These cupcakes turned out lovely.  If you like vanilla, cinnamon or both, then you’ll love these Vanilla & Cinnamon Cupcakes.  Especially with a nice hot cuppa, with the nasty weather we’re having at the moment!  I used Chocolate Icing only because my 6 year old begged me to, but I think a Vanilla Buttercream Icing would be perfect for this, which is why I have given the recipe for that icing, rather than the chocolate that I made.

Vanilla Cinnamon Cupcakes

Also apologies for the terrible picture, I only had an ipod to use as a camera, and terrible lighting!  But it’s what they taste like, not what they look like that matter in the end right? 😉

Vanilla & Cinnamon Cupcakes with Vanilla Buttercream Icing.

Ingredients

150g Butter, softened

1 & 1/2 Cups of Castor Sugar

2 Eggs

2 teaspoons of Vanilla Essence (I used 3 because I LOVE vanilla)

2 & 1/2 Cups of Self-Raising Flour

1 & 1/4 Cups of Milk

2 teaspoons of cinnamon (I used 3 teaspoons here again, because I am also a huge fan of cinnamon!)

Method

Preheat oven to 190 degrees Celcius.  Beat butter and sugar until pale and fluffy.  Add eggs, mix well.  Add sifted flour and cinnamon, and the milk and vanilla – beat until smooth.

Place paper baking cups into a greased muffin tray.   Pour mixture until cups are 2/3 full.  Makes 18-24 cupcakes, so you will need to do 2 batches.

Bake for 20 minutes, or until golden.  Take out of oven, rest for 2 minutes in the muffin tray, then turn out to cool on wire rack.  Ice when cool.

 

Vanilla Butter Cream Icing

Ingredients

150g Butter, softened
2 Cups Icing Sugar
2-3 Tablespoons of hot water
1/2 -1 teaspoons of Vanilla Essence

Method

To make the buttercream, beat the butter until smooth and pale. Gradually add the icing sugar, half a cup at a time, with enough of the hot water to make a creamy mixture, beating between each addition until fluffy, beat in essence at the end. Pipe onto cooled cupcakes or spread on with a knife.

Make a cuppa, and enjoy!
