Banana Cake with Lemon Butter Icing

I had some bananas that needed using and decided to make a banana cake.  It has been years since I made a plain old banana cake and asd I write this, half the cake has been eaten by my family already.



125g soft butter

3/4 cup sugar

2 free range eggs

2 large bananas, mashed

1 teaspoon baking soda

2 tablespoons of hot milk

2 cups flour

1 teaspoon baking powder

Preheat oven to 180 degrees.  Cream butter and sugar until lovely and fluffy, then add one egg, beat well then add second egg and beat well again.  Add banana and mix again.  Mix soda with milk and add to the mixture.  Sift in flour and baking powder.  Fold gently then pour into greased baking tin and bake for approximately 45 minutes.  Leave in tin to cool.  Once cool turn out and ice.


Lemon Butter Icing

100g soft butter

a few drops of vanilla essence

2 cups of icing sugar

2 tablespoons of lemon juice

zest of lemon

Beat butter until fluffy and then add the rest of ingredients.  Mix well and try not to eat too much before adding to the cake!
