Mini Quiche … Gone in 60 seconds!

Yip, as soon as these babies come out of the oven they are gobbled up quick!

Super quick and easy to make (as I cheat and use sheet pastry) and you can add the ingredients you and your family like.  I have made ham and cheese as that is what my boys love but if it were just for me I would add in onion and cherry tomatoes too!


3 sheets of flaky puff pastry

3 eggs

150ml cream

150ml milk


grated cheese


Preheat oven to 150 degrees celcius.  Spray a muffin tray lightly with cooking oil and then cut out round pastry shapes to fit muffin holes making sure it goes right up the sides (I get four from a sheet) and then place into the muffin trays.  Add in chopped ham and grated cheese … up to you how much you like.  If you prefer other ingredients like onions, bacon, herbs etc just add in here what you like.  In a bowl whisk together eggs, milk and cream and then pour into each mini quiche.  Cook for about 40-45 minutes or until pastry edges are golden brown.  The quiches will puff up whilst in the oven but go down after they come out and cool.  These are great cold (if they last that long) and yummy reheated the next day.  My hubby loves them for lunches!

These really are a great, easy, yummy meal that can be adapted simply by adding different ingredients.  I enjoy mine with my friend Angela’s homemade tomato sauce!
